Once you see how delicious these are, and how easy to make, you’ll never need a store-bought energy bar again.
7 oz pitted dates
1/4 walnuts
2 TBSP cashews
2 tsp sunflower seeds
1 TBSP sprouted pumpkin seeds
1/4 cup dark non-dairy chocolate chips
1 TBSP tahini
1 tsp cinnamon
2 tsp shredded, unsweetened coconut
2 tsp maple syrup
Pulse to a small, pebbly consistency. Shape into a long loaf, wrap in plastic wrap, and freeze for one hour.
Slice into 12 pieces and keep them in the fridge to enjoy until you run out. Then repeat!
