This was a pretty impromptu meatless Monday dish I just happened to serve up on a Friday. Then again, if you adhere to a vegan diet, every day is meatless Monday!
By using Banza chickpea rice, you add so many grams of protein to this dish, but if you're not a fan, wild rice or wild rice pilaf would make a great, hearty substitute.
You will need one package of Banza rice, cooked until al dente
Once that is strained (do not rinse) you will mix in:
1/2 cup organic chickpeas
1/4 cup vegan feta
1/4 cup chopped pecans
Juice of half a lemon
Juice of half a lime
1/2 avocado, diced
1.5 TBSP each chives, cilantro and parsley
Drizzle it with some extra virgin olive oil and season with salt and pepper to taste. It can be served hot or cold, whichever you prefer.
