This is a quick recipe for an elegant meal, perfect for a dinner for two and dinner with friends.
Purchase a package of vegan puff pastry, and thaw according to the directions.
For this recipe, you will just thaw one of the two pieces, and roll it out on parchment paper until it is double in size.
Bake it for 15 minutes at 400 degrees.
While that is baking, heat 2 TBSP of olive and sauté:
1 chopped leek and 1 diced onion with 5 sprigs of thyme. As it browns, add 3 TBSP of vegetable stock and continue to cook until caramelized.
Sprinkle with a generous pinch of sea salt (or lemon sea salt if you have it on hand) and mix in 2 TBSP of non-dairy cream cheese.
When the pastry is cooked, remove it from the oven, cover it with the leek and onion mixture, and bake it another 5-7 minutes at 350.
