Red, White and Blue(berry) Cobbler

Sometimes an idea just comes together with a tiny bit of inspiration (aka a good produce section!)


Meet my July 4th cobbler.


In a large skillet, mix well and cook down all of these ingredients together:


6 large strawberries, diced

2 apples, peeled and diced (then they look white!)

3/4 cup blueberries

Juice of 1/2 lemon

1 TBSP vegan butter

2/3 TBSP flour

1 TBSP brown sugar

1 tbsp vanilla

Dash of salt


You’ll known it’s ready when the red of the berries takes over and the apples are beautifully tender.


Add a blend of:

1/2 cup instant oats

1 TBSP vegan butter

1/8 cup brown sugar


Mix well with your fingers until the butter crumbly within the oats and spread over the top of the fruit.


Pop in the oven at 400 for 5-10 minutes so it starts to brown (not burn.)


Serve immediately and top with something frozen or coconut whipped cream.
