I was experimenting for the holidays with a new cookie recipe and the results of this one were just too delicious not to share. Don't tell anyone they're vegan until after they try them ~ the skeptics will be converts!
You will need:
1 8 ounce package of unsalted non-dairy butter, melted
1 1/4 cups dark brown sugar
3/4 regular sugar
2 cups all purpose flour
1/2 cup bread flour
1 tsp baking soda
1 1/2 tsp kosher salt
6 TBSP liquid vegan egg
2 1/2 tsp vanilla extract
12 ounces of dark chocolate chips
Flaked sea salt
Preheat the oven to 375.
In a large mixing bowl, whisk all of the dry ingredients until well combined.
Then add the butter, egg and vanilla extract. Once mixed well, add the chocolate chips and mix once again.
Reserve half the dough and freeze for use another day. With the remainder, place 8 round balls on parchment paper, flatten lightly, and sprinkle with a bit of the sea salt.
Bake for 12-14 minutes. Let cool slightly and serve.
