Artichokes are not only beautiful but they are also beneficial. To start, they are low in calories and high in fiber, so a great addition to any healthy diet plan. They also aid in alleviating nausea and gas, help lower cholesterol, support a healthy liver and reduce risk of some cancers.

They do require patience and preparation but the outcome is so worth it.

Steam or boil them to tenderize them. Grill or sauté them to crisp them. I love them fresh off the stove with a little olive oil and sea salt and plenty of fresh lemon juice.
