Eating Well on Any Budget

Updated: Jan 26, 2021

You don't need to spend a lot to make healthy, flavorful recipes!

Cooking doesn't have to be complicated or expense. Eating healthy meals doesn't mean you have to compromise on taste.

Take this simple salad for example.

Extra firm tofu makes a great, vegan substitute for eggs. Dice some celery and some carrots and add it to your tofu. Season it with a little plant-based mayonnaise, dijon mustard and tarragon.

Want something more filling? Toast a couple of slices of delicious rye or sourdough. Add slices of lettuce or tomato and you have the perfect sandwich. Are you on the go? Put the salad in one containers and pretzel flats in another to dip and enjoy. Not a tofu fan? Try it with chickpeas and play with your spices, maybe swapping mustard for a dash of your favorite hot sauce. The possibilities are endless and no costly, fancy ingredients are needed!

More tips like these will come but remember - it doesn't have to be expensive to taste it!
