Apple Cake



Coat the sides of an 8x8 Pyrex dish with baking spray and place a single, tight layer of (about) 3 small sliced honey crisp or gala apples on the bottom.


In a small saucepan combine:

3/4 cup sugar

3 TBSP of water

Melt over medium heat until it caramelizes. Keep an eye on it, swirling the sauce pan if needed. Mine definitely crystallized before it caramelized but I used it anyway! Pour the caramel over the apples and set aside.

Melt 8 oz Miyokos vegan butter and combine it with:

1 cup honey

5 oz oat milk

6 TBSP liquid vegan egg (I use

JUST or Trader Joes)

Squeeze of lemon juice

1 tsp vanilla

In a mixing bowl combine:

2 cups flour

1/2 cup light brown sugar

2 tsp kosher salt

1 tsp each cinnamon and nutmeg (you could add ginger)

1/2 tsp each baking soda and baking powder


Add the dry ingredients to the honey-butter mixture and pour over the apples.


Bake 60-75 minutes at 350 degrees. You don't want to dry it out but test the center with a toothpick or skewer to make sure the center is well cooked.

Let cool, scrape the sides of the Pyrex with a knife to loosen the cake if needed (mine didn't) and turn upside down on a cake plate to serve
