It’s picnic season and my chickpea salad should be the next new dish on your menu! It can be enjoyed chilled wrapped in lettuce leaves, atop a toasted, warm sourdough or simply in a bowl with a fork. It is light, satisfying, packed with healthy goodness, and plenty of fiber so keep you satiated longer without the guilt of overindulgence.
1 can garbanzo beans, drained
1 carrot, peeled and diced
1 celery stalk, ends removed, chopped
1 radish, chopped
2 TBSP fresh dill, chopped
1 avocado, diced
1.5 TBSP white wine vinegar
Generous pinch of season salt
Mix. Chill. Serve!
