Brown Rice Cakes with Basil, Avocado and Vegan Feta + Egg

Do you ever have one of those mornings?


I had one today. Alarm went off at 6:30 followed by texts shortly after. I answered texts and emails, poured coffee, answered more emails, emptied the dishwasher, brushed my teeth, answered more texts and emails, learned fire alarms were going off at the office (all is fine)... By the time 9am rolled around? I was exhausted and hungry.

I have a business lunch and dinner plans later this evening so I didn't want something heavy, but I did want something crunchy and tasty with some protein.


I grabbed four Lundberg brown rice thins while I heated one JUST egg patty. I spread half a ripe avocado across the four crackers, and then topped each with one fresh basil leaf, a sprinkle of vegan feta, and a quarter of the egg patty. Crunchy, protein-filled, savory, fresh...satisfying! And yes, I had a LOT of coffee to go with it.
