Brussel Sprouts and Shallots

I wasn’t going to cook last night. I wanted to work out ️‍ and pour a glass of but when I opened the fridge, brussel sprouts and fresh herbs were staring me down.


The result was pretty good, served alongside vegan eggs, chock full of basil, dill and cilantro. It was breakfast for dinner!


You will need:


1 bag of brussel sprouts, cut in 1/3s

1 TBSP fresh rosemary

1 shallot, finely sliced

Generous drizzle of EVOO

Juice of 1 lime

Drizzle of maple syrup

Toss all ingredients in a foil lined baking dish with 1/2 the lime juice - save the rest for later


Broil for 20 minutes, stirring every 5, spraying with cooking spray after 10.


Squeeze the rest of the lime juice over the top before serving. I am trying to cook with less salt, but certainly salt to taste if desired!
