Grab a gallon Ziploc bag. Into that add:
1 thinly sliced purple cabbage
3 TBSP fresh, chopped cilantro
1 cup apple cider vinegar
1/4 cup honey
1.5 TBSP Dijon mustard
Seal the bag, shake it up well, and refrigerate for an hour. Pour off the excess liquid and serve. It should last about a week.
