Cauliflower, Canellini and Potato, Oh My!

What do you do when it’s still Chanukah and you don’t want latkes but you have potatoes and oil on the brain?


OR if you just want a hearty, filling, healthy cold night’s dinner?


Same answer!

Preheat your oven to 450 degrees. Into a gallon ziploc bag add:


Seal the bag, shake it all up, and pour it onto a lined baking sheet. Bake for 25-30 minutes, tossing after 15 minutes so nothing burns and it all cooks evenly.


Remove from the oven, top with some diced vegan feta (and maybe a tiny squeeze of fresh lemon juice) and enjoy.
