Chickpea Salad

Going on a picnic?


Summer weather has definitely arrived and this is the perfect plant-based accompaniment (not to mention a healthier alternative to potato or macaroni salad) ~ chickpea salad!


Mix together:

1 can of organic chickpeas, drained and rinsed

1 TBSP Dijon mustard

1 TBSP vegan mayonnaise

2 TBSP chopped, fresh dill


Depending on your preferred crunch level, add:

1-2 carrots, peeled

1-2 celery stalks, chopped

Chill and serve or grab on the go alongside some fresh pita, gluten-free wraps, cut veggies or a fresh salad with your favorite dressing (I recommend a mustard herb vinaigrette with this one!)
