Chili

It's not just for game day and there's no meat required.

Sauté one large chopped yellow onion and 2 cloves of minced garlic in extra virgin olive oil.


Add:

1/2 package of Gardein crumbles

1 can, drained, black beans

1 can, drained, pinto beans

1/2 a large can of crushed tomatoes

1/4 cup vegetable stock

1 diced tomato


Once the Gardein and beans are coming together, add 1/2 TBSP each of cumin, chili powder, garlic powder, onion powder, smoked paprika and salt and mix. As it continues to simmer add a generous handful of chopped cilantro and 1/4 cup of chopped scallions. Mix, taste, and see if you want to add any additional spice.


Top with more chopped scallions and (vegan) cheddar and serve with a side of homemade guacamole and baked potato skins!


It's so easy...halve and bake potatoes and once they are done, scoop out the center of each half. Top with the cheese of your choice and bake until it melts and sprinkle some scallions on top. It makes a great spoon for the chili :-)
