Citrus Salmon

If you want an alternative to the traditional baked or seared salmon, this dish may be a great choice.

1 lb salmon, cut into 2 pieces

1 lemon, ends removed and sliced

1 blood orange, ends removed and sliced

12 blackberries

1 package fresh spinach

Extra virgin olive oil

Salt and pepper to taste


This is just so easy...


Heat the oven to 425 degrees.

Line a baking tray with aluminum foil.

On top of that place a layer of spinach, the two pieces of salmon and scatter the berries and citrus slices, some on the salmon, some on the spinach.


It will be gorgeous!


Drizzle some olive oil over everything on the tray and season the fish to taste.


Bake for 20 minutes and check to see if it needs longer (depends on the thickness.) That's it!
