Broccoli and cauliflower (I know it’s white but romesco can be green...) are not only high in vitamins and minerals, but these cruciferous vegetables may help prevent cancer.


Broccoli also happens to be a great plant-based source of calcium.


Dill is packed with flavonoids, which may help reduce the risk of heart disease and stroke and can also reduce LDL cholesterol levels.


Scallions are a great source of vitamin K, helping reduce blood clots and keeping bones strong.


Cilantro can help reduce stress and aide in digestion.


Chop them all up and add them to a lined baking sheet. Drizzle with avocado oil (which can lower heart disease risk, improve complexion, assist with arthritis and more) and kosher salt and bake at 400 until tender and crispy.


Serve with your favorite lean protein, add to a salad or toss them into vegan eggs.
