Move over chicken salad - this is the dish you want on your table!
1 can organic garbanzo beans
1 TBSP fresh chopped dill
1/2 cup picked beets, chopped (plain roasted beets are ok too)
Juice of 1/2 small lemon
2 chopped radishes
1.5 TBSP vegan mayo
Mix well, season to taste, and serve or refrigerate for up to a week.
