This is the easiest soup you could ever make: just grab all of these super fresh ingredients and toss them into a high-speed blender until mostly smooth. Refrigerate overnight before serving.

1 tomatillo

3/4 large seedless cucumber

1/2-3/4 cup cilantro

2 tomatoes

1 avocado

1 shallot

1/4 yellow onion

1.5 TBSP rice wine vinegar

Once pureed, add salt and pepper to taste and red pepper flakes to amp up the heat.

For a creamier texture, whisk in 1 TBSP of vegan yogurt or sour cream.
