Greek Salad

In this simple, savory, satisfying Greek salad you’ll never miss the cheese:


chopped firm tomato

diced seedless cucumber

sliced red onion

halved, pitted olives

spoonful of capers

red wine vinegar

pinch of oregano

drizzle of olive oil

2 TBSP of your favorite hummus mixed in to thicken, flavor and add a little protein
