Green Pea Guacamole

Who doesn’t love a little guac? This recipe brings a bright nuance to a more traditional one.


Into a medium mixing bowl add:


2 ripe avocados

1 cup steamed green peas (they should be tender but still pretty bright in color)

The juice of one lime

Kosher salt to taste

1 TBSP of chopped cilantro is optional

Mash with a fork until the avocado is mostly smooth and about half of the peas are smashed.


Serve with chips and your favorite salsa or a gorgeous crudité platter with lots of bright, spring colors: sugar snap peas, jicama, beets, cherry tomatoes, cucumber…
