You can add some dolmades, or even chickpeas if you need a little protein, but you can also enjoy this refreshing light bite all on it’s own.
You will need:
1 large seedless cucumber, chopped
1 lemon, juice only
3/4 cup microgreens
1-2 tsp za’atar
2 tsp good quality olive oil
2-3 ounces vegan feta, small cubes or crumbles
Kosher salt to taste
Mix all together and serve or make a day ahead and refrigerate overnight, adding the cheese and salt when you are ready to eat.
