Passion Fruit Mojito

Looking for a little passion?

I have just the thing…

If you’ve been following me for a while, you know I love cooking shows. I find them to be the perfect way to unwind on a lazy weekend or on a weekday evening after a long day of work. Even though I can’t eat most of what they make, it gets me thinking about how to shake things up and make new recipes of my own.

Master Chef Legends got me excited about passion fruit, and this sweet, beautiful little gem inspired a lot of creativity. There are many ways to use it (it would make a fabulous glaze…) but having just been in Puerto Rico, I’d toss it into a mojito! I don’t like rum, so I’m suggesting vodka in this recipe:

🍹 1 ounce of lime juice

🍹2 ounces of passion fruit (pulp and seeds)

🍹3 ounces of club soda

🍹1 ounce of vodka

🍹6 mint leaves

🍹2 tablespoons of sugar

🍹handful of crushed ice

🍹Extra mint sprigs for garnish

🍃 Muddle mint leaves with sugar and lime juice in a tall glass.

🥄 Stir in passion fruit, club soda, and rum.

🧊 Add crushed ice, shake, pour and garnish with extra mint. Serve immediately and enjoy!
