Potato Latkes

The reviews are in! Lots of awesome latkes ~ and they’re vegan too!

Here is my super simple, super flavorful and crispy recipe:

Into a Cuisinart add:

3 peeled, chopped potatoes

1 chopped yellow onion

1 TBSP flour


Purée until nearly smooth.


Pack into small pancakes, squeezing out the excess water as you do.


Place on a well oiled baking tray (or trays,) sprinkle with a little kosher salt, and cook for 15 minutes at 450. Flip and continue to cook until crispy on both sides.


Serve hot by themselves, with applesauce or with non-dairy sour cream. Chag Chanukah sameach to all who celebrate!
