Got pumpkin and need a healthy reboot between the holidays?
These healthy pumpkin bites may be just what you’re looking for:
In a large bowl combine:
1/4 tsp each: chia, ground ginger, ground cinnamon
2 pitted dates, chopped
1/4 c oats
1/8 c sliced almonds
1/4 cup pumpkin puree
1/8 cup peanut butter
Mix well!
Roll into 8 small balls, cover, and refrigerate for at least two hours. They will last a week in the fridge ~ if they last that long 😉
