Spicy Peanut-y Cabbage Slaw

Have you heard of the Thug Kitchen Cookbook?


It is the most irreverent plant-based cookbook I've seen and I LOVE it!


If you've been following my recipes for a while, you've noticed that they are either totally original, or they are modified versions of someone else's creations. This recipe is straight out of the book and I wouldn't change a thing! Well, I didn't have enough cabbage so I did add a little shredded lettuce and a julienne seedless baby cucumber, but you know what I mean.


Here is what you need:


Peanut Dressing:

3 TBSP peanut butter

2 TBSP warm watter

3 TBSP rice vinegar

2 TBSP lime juice

1 TBSP minced fresh ginger

1 2/3 tsp Srirachaor your favorite Asian-stye hot sauce

1/2 tsp soy sauce or tamari


Mix the peanut butter and water together in a medium glass until creamy. Add the rest of the dressing ingredients and mix it well!

In a large bowl combine:


3 cups thinly sliced red cabbage

3 cups thinly sliced green cabbage

1 carrot, cut into thin matchsticks

1/3 cup thinly sliced green onions


Toss it all together and serve with a side of your favorite protein or in a taco of your choice...
