Sun-Dried Tomato Hummus

This recipe is totally the result of a pantry raid. It was early in the morning, I had no protein in the fridge, but I did have chickpeas and tahini.


I grabbed my Nutribullet and into it I threw:

1 can, drained, organic chickpeas - keep the liquid*

1.5 TBSP tahini

1 TBSP olive oil

2 tsp paprika

Juice of one small lemon


Puree all of the ingredients while you warm the *chickpea liquid. Once it's hot (you can even do it in the microwave for a minute,) whisk it into the blending mixture and serve. I enjoyed mine on a sliced apple for a snack, in a rolled whole wheat flat for breakfast, and served it to company with crudite at dinner!
