Super Green Summer Salad

This is my favorite new salad, inspired by the pieces we often leave behind: broccoli stalk and asparagus stems. They have great flavor and crunch, loads of fiber, and deserve a closer look.


Dressed simply in fresh lime juice, a little maple syrup, and a pinch of sea salt, it is just so fabulous and refreshing!


1 small bunch of asparagus, stems only, chopped

1 broccoli stalk, diced after peeling the rough exterior

1 large handful of French or string beans, chopped

1 scallion, chopped

A sprinkle of hemp and sunflower seeds

1/8 cup each raw pistachios and chopped almonds, skins

Toss it all in a bowl and enjoy.
