Vegan Game Day Chili

What's the Super Bowl without chili? (Or commercials?) This vegan version is my favorite, and I think they corn and olives and a little bit of lightness to a usually heavy dish.

You will need:

1/2 large chopped yellow onion

2 cloves of garlic, minced

1/4 tsp red pepper flakes

1/4 tsp cayenne powder


In a large sauté pan, heat some extra virgin olive oil. The add these ingredients, stirring to ensure the garlic cooks but doesn't burn.


Once that starts to cook down add:


1 cup frozen Beyond Meat or Gardein crumbles

1/2 cup, organic black beans, drained

1/2 cup corn kernels, fresh or canned organic and drained

14.5 oz can diced tomatoes (preferably with basil, garlic and oregano but add a bay leaf and sprinkle of garlic powder and dried oregano if unavailable. Remove the bay leaf before serving.)

As it’s coming together add, and starting to thicken add:

3 diced baby potatoes

1/2 cup diced pitted black olives

Lower the heat and keep cooking until looks like chili should!

When serving, you can top it with chopped scallions and dairy-free sour cream if you like. A side or tortilla chips is a perfect pairing as well.
