YA Green Goddess Salad with Mustard Vinaigrette

One of my not-so-guilty pleasures these days is watching Mary McCartney Serves It Up. This lovely and talented chef cooks up interesting Vegan meals with famous friends and of course, her spectacularly talented family, Sir Paul and Stella McCartney.


One of Mary’s favorite things is vegan mayonnaise. I keep a jar in my fridge but use it sparingly. Following her lead, I added a bit to my homemade dressing and now I may not stop!


Into a medium salad bowl add:

1 head of romaine, chopped

1 cup of mixed greens

1/2 cup green peas

1/2 can diced artichoke hearts

1/2 can sliced hearts of palm

1 TBSP parsley

1.5 TBSP dill


In a small glass whisk together:

1/4 cup white wine vinegar

1/2 cup olive oil

1 large tsp yellow mustard

1 large tsp mayonnaise

1 squeeze lemon juice


Toss some into the salad, tasting as you go, adding until it’s to your liking. Interesting flavors, green leafy vegetables, gorgeous colors. Perfect for a quiet night at home or your next dinner party.
