Apple Beet Slaw

Sometimes I buy produce in the moment. I see something, I'm enticed by it, and I'll figure out what to do with it later on. That's how this beet slaw came to be. I had three red beets I'd almost forgotten I'd purchased and I just couldn't let them go to waste. You can pair this slaw with any protein, and perhaps a side of rice or roast potatoes. It's simply gorgeous, boasts bright, fresh flavors, and is a nice alternative to a traditional salad (though it would be lovely over some crisp arugula.)

In a large mixing bowl you will combine:

3 red beets, julienned

2 Granny Smith apples, julienned

1 cup chopped walnuts

Juice of 1 orange

Juice of 1 small lime

1/2 cup apple cider vinegar

Large pinch of sea salt


Mix well and let sit for 2-3 hours or overnight and season again to taste before serving as the flavors may mellow over time.
