This was an instant family favorite! They had the non-vegan version. Both are below:
2 cups flour
1/4 lb melted (vegan) butter
3/4 cup light brown sugar
2 (liquid vegan) eggs
3 mashed bananas
1 tsp baking soda
1/4 tsp salt
1/3 cup dark chocolate chips
1 TBSP sugar
1/4 tsp cinnamon
Heat oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan. Mix the melted butter and brown sugar together until smooth. Add the mashed bananas, eggs, baking soda, salt and flour, one cup at a time. Then add the chips.
Pour into prepared pan. Top by sprinkling the sugar and cinnamon.
Bake about an hour, until a toothpick inserted into center comes out clean. Let cool in pan 10 minutes and then serve.
