Beet Tacos

Need a little red, white and blue for July 4th?

These gorgeous beet soft tacos will be a holiday hit!


In a baking dish combine:

1/2 cup raw, unsalted pistachios

1 package Love Beets, or 7 small cooked beets, diced

1 1/4 cup cooked lentils

2 TBSP honey

1/4 red onion, diced

2 TBSP parsley, chopped

1/2 clementine juice


Broil for 3 minutes, stir, and broil another 2-3. Don’t let them dry our or burn.


Wrap them up in a delicious soft flour tortilla and enjoy!

For the blue, add a side of crunchy blue corn chips with homemade guacamole and/or a refreshing mocktail or cocktail of seltzer or vodka with an splash of lemon and some fresh muddled blueberries to round out the holiday spirit.
