Breakfast Parfait

If you’re vegan you know the challenges of a breakfast buffet ~ or a breakfast menu at restaurants in general. There is so often a parfait offered as healthy option but for those of us who can’t, or choose not to, eat dairy, we get stuck.

While I don’t own my own restaurant or B&B (yet…) here is a vegan breakfast parfait anyone can enjoy. This makes 4 (or more) servings and looks beautiful in glass:


Ingredients:

24 ounces Forager cashew yogurt

3/4 cup organic blackberries, halved

3/4 cup container organic blueberries

1 organic kiwi, peeled and diced

2 TBSP hemp seeds

1 cup walnut halves

Maple syrup


Pour some yogurt into the bottom of each glass.


Top with some of the fruit and walnuts, repeating twice. The yogurt is pretty smooth so it won’t quite layer, but dish it this way just the same.


Over the second layer of fruit sprinkle the hemp seeds and drizzle some maple syrup. Garnish with fresh mint and serve.
