Charoset is a traditional Passover dish. It has a place on the seder plate to represent the bricks and mortar over which the Israelites slaved while captive in Egypt.
It happens to be plant-based and delicious!
The traditional recipe calls for apples, walnuts, sweet red wine and cinnamon but I love to mix things up a bit. Here are two recipes I created for this year's holiday.
Date and Cashew Charoset:
Ingredients:
1 apple, peeled and large chopped (I used honeycrisp)
1/3 cup cashews
1/3 cup walnuts
4 dates, chopped
1/4 cup white wine (I used Pinot Gris)
1/4 tsp cinnamon
Place all ingredients into a Cuisinart and pulse until finely diced.
Apricot and Pistachio Charoset:
Ingredients:
1 apple, peeled and large chopped (I used honeycrisp)1/3 c pecans
1/3 c pistachios
5 dried apricots
1/4 c white wine (I used Pinot Gris)
1/8 tsp cinnamon
1/8 tsp ginger
Place all ingredients into a Cuisinart and pulse until finely diced.
