This dish has the same vibe, both in taste and benefit, as hummus but it packs a really satisfying crunch. it becomes a meal all on its own!
1 large carrot, diced
1.5 celery sticks, diced
8 ounces garbanzo beans
1.5 TBSP tahini
2 TBSP chopped dill
Juice of 1 lemon
2 tsp balsamic vinegar
Pinch of sea salt to taste
Mix together and enjoy. Add a little shredded lettuce and some pickle slices to a pita and you’ve got a fabulous sandwich as well!
