Fruit and Nut Couscous

It’s time for the first Meatless Monday of 2022 so here is a brand new recipe for your dinner table:


Bring 2.5 cups of water or vegetable stock to a boil. Add 2 cups of Israeli couscous, cover and lower to a simmer for 8-10 minutes.




About halfway through, remove the lid and mix in:

1 chopped scallion

1 TBSP chopped flat leaf parsley

1 TBSP chopped dill

6 chopped, dried apricots

1/4 cup chopped walnuts


Cover again and let simmer, stirring occasionally, until the couscous is fully cooked.


Finish with a drizzle of olive oil and kosher salt and pepper to taste.
