Vegan Pesto

I crave very few things I used to eat, but a good pesto is sometimes one.


I have tried a couple of other people’s vegan recipes, and even a couple of store-brought brands, but once I created this recipe it will now be my go-to.

In a high-speed blender or Nutribullet add:

2 cups of fresh basil

1/4 cup shelled pistachios

1/2-3/4 cup shredded Violife grilled cheese (bonus: it has B12!)

2/3 cup avocado oil


Purée until smooth and use on anything from pasta to cauliflower steak.
