1/4 cup melted vegan butter
1/3 cup oat milk
1 tablespoon ground flaxseed
Just shy of 1 cup monk fruit sweetener
1 TBSP maple syrup 2 teaspoons pure vanilla extract 1 cup grated zucchini 1 1/2 cups self rising flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 teaspoon cinnamon 1 ounce dark chocolate chips
1/2 cup chopped walnuts
Preheat the oven to 350 degrees.
Spray a loaf pan with baking spray and set aside.
Mix all ingredients in a bowl, whisking until it gets too thick and then switching to a spatula.
Bake 40-50 minutes to an hour, testing at 40.
