I try to follow intermittent fasting, at least during the work week. I always have coffee but I find I feel better, and eat better for the rest of the day, if I don't have a morning meal.
Having said that, we all know those mornings where we just need SOMETHING. Lately, that something has been protein power balls: nuggets of nuts, seeds and other raw ingredients perfect for just popping into my mouth, giving a little bit of added fuel to my morning.
Well, I finally decided to make my own and freeze them to have on hand. They take very little time to make and save me time in the morning. It's certainly more time-efficient than driving to a cafe to search for someone else's!
In a Nutribullet or small chopper combine:
1/8 cup dried cranberries
1/8 cup dark chocolate chips
1/4 cup walnuts
1/2 cup almond butter
1/4 tsp ground ginger
1 tsp vanilla
Pinch of sea salt
Blend it all just until the larger pieces are smaller, leaving some pieces for texture.
Roll them into balls, either ten small or five large. I'd rather have ten small as I can always go back for seconds...
Pop them into the freezer for at least one hour and grab one or two from there as you choose. They will last in the freezer longer than you will refrain from eating them!
